The C-Sharp features four sharpening angles (17º, 20º, 25º, and 30º) made of 600 grit ceramic. It also features an 800 grit ceramic grinding stone that can be used for polishing straight or serrated blades. Ideal as an accessory for the Lansky System or as a stand-alone sharpening solution, the C-Sharp offers the same features as the QuadSharp, but in an all-ceramic design.
● Ceramic sharpening block with 800 grit for fine polishing and serration;
● Medium ceramic slots with 600 grit;
● Durable metal body;
● 100% compatible with all Lansky systems and adjustable angle pivots.
Instructions:
1. Ceramic V-grooves (600 grit): 17º, 20º, 25º and 30º.
Holding the knife with your dominant hand and holding the sharpener with the other hand, slide the knife through the desired angle groove. Use moderate pressure. Rinse the knife after sharpening.
2. Ceramic sharpening stone
Use a ceramic element with a medium grit (800) as a sharpening stone or as butcher's steel. The ceramic sharpening stone is harder than steel, never wears out, and can be used frequently as the primary sharpening element of your C-Sharp™. The ceramic sharpening stone is also tapered for sharpening serrated knives.
3. Sharpening the teeth
Sharpen one notch at a time by pulling the ceramic element up to the fluted side of the notch. For large serrations: Slide the sharpener from one side of the serration to the other. Repeat until the teeth are sharp and then move on to the next tooth line.
